Making Sure To Disinfect and Sanitize The Dishes

With the outbreak of the H1N1 virus, it is more important now than ever for restaurants to properly sanitize their eating utensils and dishes.  I work at the health department and I also visit restaurants and help them to develop a proper sanitizing plan.  It is a must to have a warewashing machine because this will ensure that the dishes are disinfected and clean.  More and more restaurant owners are turning to us for advice because of the number of illnesses that are out there.  I am glad that they are taking this responsibility seriously because it really is very important.
